- The waste water first inflows from the kitchen sink to the traps and the food solids are separated in an internal solid strainer basket.

- To ensure that the grease doesn’t solidify, a heater is used to keep them in the liquid state. A skimming wheel rotates continuously to push the grease and send it to the discharge trough. - The residual water which is now completely grease-free outflows from the other end of the traps and into the sanitary tanks.
